Filter coffee refers to a brewing method where hot water extracts flavours from coarsely ground coffee through filtration. It falls into two main categories: drip brewing and immersion brewing.
- Drip brewing (V60, Kalita Wave, Chemex) involves pouring water over coffee grounds and allowing it to pass through a filter using gravity.
- Immersion brewing (French Press, Clever Dripper, AeroPress) involves steeping coffee grounds in water before separating the brewed coffee from the grounds.

Filter coffee is brewed using gravity or immersion, allowing for a slower extraction that highlights delicate flavours and clarity. Espresso, on the other hand, is brewed under high pressure, resulting in a concentrated, rich shot with crema. Filter coffee is typically smoother and more nuanced, while espresso is bold and intense.
The ideal grind size for filter coffee depends on your brewing method:
- Coarse – French Press, Cold Brew
- Medium-Coarse – Chemex
- Medium – V60, Kalita Wave
- Medium-Fine – AeroPress (for shorter brew times)
Using the right grind size ensures balanced extraction and enhances flavour clarity.
A common starting point is 1:16 (1 gram of coffee per 16 grams of water). Adjust according to taste:
- Stronger brew – 1:15
- Lighter brew – 1:17
For precise results, using a scale helps maintain consistency.
The ideal water temperature is 92–96°C (197–205°F). If you don’t have a temperature-controlled kettle, let freshly boiled water sit for 30 seconds before pouring to avoid over-extraction. Read more here about ideal water temperatures.
For freshness, store coffee beans in an airtight container away from light, heat, and moisture. Whole beans stay fresher longer than pre-ground coffee. Grinding just before brewing ensures the best flavour.
